What is ICoMST?

The International Congress of Meat Science and Technology (ICoMST) is the premier global gathering for the meat science community. Since 1955, this annual congress has served as the “World Stage” where researchers, industry leaders, and policymakers meet to share the latest breakthroughs in meat quality, safety, processing, and sustainability.

For the Canadian industry, ICoMST is more than a conference. It is a vital bridge between domestic innovation and global markets.

Future ICoMST

The 72nd ICoMST will take place in Daejeon, South Korea on August 9-14, 2026, The theme of this conference will be “Big Step Forward to the Future of Meat”. For information on the conference can be found here.
